WHAT'S FOR DINNER ?

Bismillah ar-Rahman ar-Raheem.
Assalaamualaikum .

Saturdays ..the busiest day of the week for me . Its the farewell day for my DH. He will be gone till Tuesday into a no-food station . LOL. So this is the cooking day for me ......nutritous and tasty meals by our standards . My recipes are nothing fancy ; my theme is 'simple and healty' . I am going to share here tonight for others to try if they wish .
While I was preparing dinner , I served him a hot drink and a smoothie to keep him calm and prevent him from starving for a while .
1. The hot drink is our delectable Lingzhi coffee .

2. The smoothie .( soursop / graviola)
    what i put in the blender :
    a few chunks of soft , succulent ripe soursop , seeded
    half a cup of organic yogurt
    a teaspoonful of apple cider vinegar
    a tablespoonful of raw sugar
    half a cup of cold water

  



3. Tomato Chicken rice
 

DELICIOUS BUT HEALTHY1.Saute a yellow onion that has been finely chopped
2.Add 3 tomatoes, also chopped finely. cook on low fire till the mixture turns mushy
3.Add a whole chicken ,cut into four. stir . leave for some minutes,covered.sprinkle Jiahor seasoning and pepper
4.Pour in 5 cups of water,let it b0il for a while
5.Take chicken out. bake , or cook on lowest fire. in covered wok....till golden brown
6.Cook 2 cups of organic brown rice .using the remaining liquid. once cooked, sprinkle with black pepper, Jiahor seasoning and wheatgerm. Serve hot with salad
THE SALAD
1.mix chopped cucumber, tomatoes,onion,celery.coriander leaves,,,,,,,,add black pepper, and squeeze some lemon/lime juice.plus a little olive oil. 
 
 
 
Admittedly I'm no professional cook ......just mere sharing . Hopefully it will be of use to those who are looking for simple , healthy recipes . Enjoy !
