MY PUMPKIN RECIPES .

Assalaamualaikum .

Hi dear readers,
                        I am  not good at cooking but I am fond of eating . Ha ha. I am crazy about ' buburs' and 'pengats ' lately. This is to my advantage too , 1stly it's easy to make & 2ndly it has a healthy version .These are basically sweet porridge . In other words I am sharing my recipe for 'sweet pumpkin porridge '....it doesn't sound right .I love the taste of pumpkins .a new crave . Nevermind the reason , here they are :

SWEET PUMPKIN PORRIDGE
1.  surely we need pumpkin.( a quarter of  a small fruit suffice for me)
     - seeded
     - skinned
     - & cut into 3cm x 3cm cubes


2.Coconut milk- the volume depends on your preference of consistency. I like it thick & creamy ,so I normally use a whole coconut.    

                                                         

3. For the fragrant - 4 pieces of 'pandan' leaves and a chunk of ' gula melaka'                                                          
                   


   

1.  Put  150 litre to boil with the 'gula melaka ' & 'pandan' leaves . The perfect combination of these two will       give out a distintive sweet smell.
2.Add the pumpkin pieces .Let it boil till it is soft enough to chew.
3. Turn off the fire and stir in the coconut milk ...

It's ready ....                                    



 
ps : kids love it if 'sago pearls'  are added to it  :)

MY PUMPKIN SOUP: 

Method

  1. Heat 2 tbsp olive oil in a large saucepan, then gently cook 2 finely chopped onions for 5 mins, until soft but not coloured. Add 1kg peeled, seeded and chopped pumpkin  to the pan, then carry on cooking for 8-10 mins, stirring occasionally until it starts to soften and turn golden. 


                                                                  
  1. Pour 700ml of water with a sachet of  Jiahor seasoning.please click. (don't worry about this.It comprises of a medley of mushrooms & is naturally safe) into the pan, then season with salt and pepper. Bring to the boil, then simmer for 10 mins until the pumpkin is very soft. ,add fresh yogurt (home-made preferable), and blender it all up.


                                                   
  1.  Serve it with chopped-up cilantro ( my favourite garnishing :) ) ...Dunk ( sorry if this is violating your table manners ..haha )  buttered toasts ( focacia bread or all-grain would be perfect) in it.....yummylecious  :)........this can be kept frozen for 2 months.
